Preheat oven to 450 degrees. Line a baking sheet with parchment paper. In a shallow dish combine oil and spices. If you don’t wish to measure the spices, you can sprinkle them on instead to your liking. Leave the skin on the sweet potatoes and wash thoroughly. The skin contains lots of nutrients! Cut sweet potatoes into 1/4” fries or cut into half inch cubes if you want bit size pieces. Toss fries or cubes in olive oil to coat. Spread fries or cubes out on a prepared baking sheet making sure not to overlap. Bake for 30 minutes, turning occasionally until they are browned.
